Pumpkin Spice Protein Bread

Not the average pumpkin bread you knew.

Pumpkin spice bread isn’t just a fall fling; it’s comfort you can slice no matter the season. Warm spices swirl with pumpkin’s natural sweetness, making your kitchen smell like a cozy hug and a warm sweater. But this loaf isn’t just about flavor; it’s secretly stacked with nutritional perks. It’s low in calories yet rich in fiber, vitamins (especially vitamin A), beta-carotene, potassium, and immune-boosting antioxidants. With every slice, this pumpkin spice protein bread proves that comfort food can be smart food, too. 

Ingredients 

  • 1 cup pumpkin puree 

  • 1 tbsp flaxseed 

  • 1/3 cup unsweetened applesauce 

  • 1/4 cup coconut oil 

  • 3/4 cup brown sugar 

  • 1/2 cup almond milk 

  • 1 3/4 cups all-purpose flour 

  • 1 tsp baking soda 

  • 1/2 teaspoon baking powder 

  • 1/2 teaspoon salt 

  • 1 teaspoon vanilla extract 

  • 1 1/2 tablespoon pumpkin pie spice 

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan or line it with parchment paper. 

  1. Prepare the flax egg: In a small bowl, mix the ground flaxseed with 3 tbsp water. Let it sit for 5–10 minutes until it thickens. 

  1. In a large mixing bowl, whisk together the pumpkin puree, flax egg, applesauce, melted coconut oil, brown sugar, almond milk, and vanilla extract until smooth and well combined. 

  1. In a separate bowl, sift together the all-purpose flour, Sunwarrior Pumpkin Spice protein powder, pumpkin pie spice, baking soda, baking powder, and salt. 

  1. Gradually add the dry ingredients into the wet mixture. Stir gently with a spatula until just combined. Do not overmix. 

  1. Pour the batter into the prepared loaf pan and spread evenly. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out mostly clean. 

  1. Remove from oven and let the bread cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing. 

  2. Serve and enjoy!
