1 cup pumpkin puree

1 tbsp flaxseed

1/3 cup unsweetened applesauce

1/4 cup coconut oil

3/4 cup brown sugar

1/2 cup almond milk

1 3/4 cups all-purpose flour

1 tsp baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon vanilla extract

1 1/2 tablespoon pumpkin pie spice
Instructions

Preheat the oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan or line it with parchment paper.

Prepare the flax egg: In a small bowl, mix the ground flaxseed with 3 tbsp water. Let it sit for 5–10 minutes until it thickens.

In a large mixing bowl, whisk together the pumpkin puree, flax egg, applesauce, melted coconut oil, brown sugar, almond milk, and vanilla extract until smooth and well combined.

In a separate bowl, sift together the all-purpose flour, Sunwarrior Pumpkin Spice protein powder, pumpkin pie spice, baking soda, baking powder, and salt.

Gradually add the dry ingredients into the wet mixture. Stir gently with a spatula until just combined. Do not overmix.

Pour the batter into the prepared loaf pan and spread evenly. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out mostly clean.

Remove from oven and let the bread cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing.
