Pumpkin Spice Cheesecake Bites

These no-bake pumpkin spice cheesecake bites are almost too cute to eat but way too tasty not to!

These cheesecake bites are creamy, chewy, and full of cozy fall flavor—made with Sunwarrior’s Warrior Blend Pumpkin Spice Protein for a healthy, protein-packed twist. Perfect for parties, holidays, or a quick grab-and-go snack.

Ingredients:

  • 1–2 scoops Sunwarrior Pumpkin Spice Protein Powder
  • 4 oz light cream cheese (softened)
  • 1/4 cup plain Greek yogurt
  • 1/2 cup canned pumpkin puree (unsweetened)
  • 2 tbsp monk fruit maple syrup (to taste)
  • 2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 2 tbsp monk fruit or Truvia crystals (for rolling)
  • Optional: dark chocolate chips (one per bite, for “pumpkin stem”)

Directions:

  1. Mix Base: In a bowl, beat together cream cheese and Greek yogurt until smooth and creamy.
  2. Add Flavor: Stir in pumpkin puree, Sunwarrior pumpkin spice protein powder, cinnamon, pumpkin pie spice, and monk fruit syrup. Mix until fully combined and thick.
  3. Chill: For easier rolling, refrigerate mixture for 20–30 minutes.
  4. Form Bites: Scoop mixture and roll into small balls.
  5. Pumpkin Finish: Roll each ball in monk fruit or Truvia crystals. Use a toothpick to press vertical lines around each ball to resemble a pumpkin. Place a dark chocolate chip on top as the “stem.”

Options

  1. Skip decorating and just roll into balls. Store in the fridge for a grab-and-go, high-protein snack.
  2. Store in an airtight container in the refrigerator for up to 5 days. Freeze for up to 2 months and thaw before eating.
