Glazed Pumpkin Spice Fritters

Autumn called, and it’s bringing fritters. Glazed, spiced, and cozy enough to make you forget about your regular pie.

There’s something magical about pumpkin—it’s versatile, nourishing, and naturally comforting. Packed with vitamins and antioxidants, it’s the kind of ingredient that makes you feel good inside and out. In these fritters, pumpkin’s earthy sweetness is paired with an extra boost of protein, turning a simple snack into a satisfying and energizing indulgence.

Crisp on the outside, tender on the inside, they’re just as perfect for a slow, cozy afternoon as they are for sharing at a weekend get-together. Think of them as a little celebration of balance—where indulgence meets nourishment, and every bite feels both comforting and purposeful. 

Ingredients 

  • 1 cup pumpkin puree or freshly grated pumpkin 

  • 1 cup all-purpose flour 

  • 1/4 cup coconut sugar 

  • 1 teaspoon baking powder 

  • 1 teaspoon ground cinnamon 

  • 1/2 teaspoon ground nutmeg 

  • 1/2 teaspoon salt 

  • 1 teaspoon vanilla extract 

  • 1/4 cup almond milk 

  • 2 tablespoon melted vegan butter 

For the Glaze 

  • 1/2 cup maple syrup 

  • 1 cup sifted coconut sugar 

  • 1/2 teaspoon cinnamon 

  • a pinch of nutmeg 

 

Instructions 

  1. Preheat oven to 400°F (200°C). 

  1. In a large bowl, mix the dry ingredients: flour, baking powder, coconut sugar, cinnamon, nutmeg, salt, and Warrior Blend Pumpkin Spice Protein Powder. 

  1. In another bowl, whisk all the wet ingredients: pumpkin puree, vanilla, butter, and almond milk. 

  1. Gradually pour the dry mixture into the wet mixture. Stir until you get a smooth, thick batter with no lumps.  

  1. Scoop the batter onto the parchment-lined baking pan using a spoon or ice cream scoop, shaping each fritter to your preferred size and flatness. Be sure to leave enough space between them so they bake evenly. 

  1. Place the baking pan in the preheated oven and bake for 15–20 minutes. The fritters are ready when a toothpick inserted into the center comes out clean. 

  1. Once baked, remove the fritters from the oven and allow them to cool on a wire rack. 

  1. In a small saucepan over low heat, combine maple syrup, coconut sugar, cinnamon, and nutmeg. Stir gently for 2-3 minutes until caramelized. 

  1. Drizzle the spiced maple glaze on top of the fritters. Let them absorb the glaze before serving. Optionally, you can dunk them whole into the glaze for full coverage. 

 

Notes 

  • If you’re starting with a whole pumpkin, roast it first until it’s soft and tender. Roasting brings out the pumpkin’s natural sweetness and flavor. Once cooled, mash it into a smooth puree, aiming for the same thick consistency you’d get from canned pumpkin. 

  • Frying is another way to cook pumpkin fritters, but it means deep-frying them in hot oil. While this method gives the fritters a crisp, golden outside, it also adds more calories. If you choose this method, be sure to use peanut oil or vegetable oil. Have some paper towels ready to absorb any excess grease.
