High Protein Christmas Mint Pattie Smoothie

Giving the classic mint pattie a holiday makeover, the indulgent waft of mint, bold texture of dark cacao, and velvety aroma of coconut all make for an exciting breakfast bowl that’s not just pretty but also nutritious. 

Surely, this smoothie encapsulates the spirit of a mint pattie in every creamy, celebratory spoonful. It’s not just breakfast; it’s a moment of holiday wonder packed in a healthy, decadent bowl. 

Ingredients 

  • 1/2 cup coconut milk 

  • 1/2 cup avocado slices 

  • 1 cup spinach 

  • 5-7 fresh mint leaves 

  • 1 tablespoon cacao nibs 

  • 1 tablespoon mini dark chocolate chips 

  • 1/2 cup crushed ice if desired 

  • 1-2 drops peppermint essential oil 

Garnish 

  • 2 tablespoons pomegranate seeds 

  • 2 tablespoons granola 

Instructions 

  1. Combine liquid and greens. In a high-speed blender, first add the coconut milk, spinach, fresh mint leaves, and peppermint essential oil. Blending the liquids and leafy greens first helps create a smoother consistency and ensures no leafy bits remain. Blend for about 30 seconds until completely smooth. 

  1. Add creamy and powdered ingredients. Next, add the avocado, Sunwarrior Ormus Supergreens, and Warrior Blend Protein into the blender. 

  1. Incorporate chocolate and ice. Add the cacao nibs, mini dark chocolate chips, and crushed ice to the blender. Pulse the blender to integrate them into the mix. 

  1. Blend. Secure the lid and blend on high for 60-90 seconds, or until the mixture is thick, creamy, and uniformly combined. 

  1. Assemble your bowl. Pour the thick smoothie into a chilled bowl, spreading it evenly with a spatula to create an even canvas for your toppings.
